cPanel Spam Mail ?

Hello there, From time to time we receive spam mail warnings from the server where our website is located. Approximately 50 thousand Mail has been added to the mail queue. How do they do that? What is the way to prevent this? Is there a more effective security method than closing mail? This was in our other cPanel servers. We even went to the other sites to shell out the files in our other sites and indexed on different pages. Thank you for your help. I'm sorry for my bad english.
