Email and Website on Different Servers?

Hi all, So I've recently run into a client who wants to host their website elsewhere and gave me a A record to point the domain to. But they want to keep their email on our servers. I've tried changing the A record but when I do that, emails start bouncing and not working. Any ideas? Thanks, Ryan
