you can go into cpanel and configure your spam filters to remove such emails. It has various options for you to choose. This doc link will help you: How to Create a Spam Email Filter - cPanel Knowledge Base - cPanel Documentation

Thanks but I know how to create a filter but don't understand where to set the language... or how to block some spam that have always a different type of email address. So for that reason I would like to block all the Japanese or Chinese mail. PS: on the action panel, "discard message" what does? I mean is there a way to remove totally spam mail when they are detected? I don't want to put them in any folder, not spam, not junk not anything, just don't want to see them

The system discards the incoming message with no failure notice. So it wont go to any spam folder etc.
