Apache collective log

What options do we have available to tail / get stats on our server to see which sites uses the most processes, more importantly, has the most apache requests? Is there a combined log we can view (like a combined access log for all sites) or some packages / plugins that can assist in getting some stats on accounts / domains and their traffic on the entire server?
