    I have found that the default logging is perfectly adequate to diagnose any mail delivery issues. You may want to consider turning on global spam assassin and turning on the option to not forward messages that sa flags as spam as forwarding spam cam actually get your own server ip blocked.

    Actually, I've used Spam Outgoing plugin from ConfigServer Team and it has a good job there, do you suggest any plugins that help mange Exim or such service their ? ,, I just want to control and monitor the server performance and solve any issue reported as soon as it received.

    I have not found any particular plugin that I have found overly useful personally but others may feel differently. I'm not supposed to self promote here but you may find my signature useful plugin wise.

    Do you think that I can change log_selector = +all which will enable me dig deeper in the log output ? Is it feasible ?

    I'll reiterate what I said previously on that point. for ME, I have never had an issue that I could not diagnose with the default logging options. You can always turn it on if you wish. Personally, I feel that there can be too MUCH logging which ends up making it harder to find the information you are looking for. But this is largely a personal preference, so give it a try.
