  Also I have cPanel Version 80.0 (build 18) am I correct in this uses Dovecot? Thanks

  You do use dovecot when using cPanel, the instructions on their site seemed to be pretty clear about how to add the users but ultimately if you're unclear I'd suggest contacting the support for Office365 for further information.
