Apparently cPanel thought it would be brilliant to remove the GUI for these settings. Now you need to edit /etc/cpupdate.conf Here you can set: RPMUP=manual UPDATES=manual "to set everything back to manual updates.

We're forcing LTS now, with automatic updates regardless of those settings. This means that no matter what, we will attempt to maintain the server on at the very least the LTS version. The GUI for that was removed with the idea that if you ACTUALLY need to implement manual updates you would be able to do so through the CLI. The correct entries for this file can be found in the documentation here: The cPanel & WHM Update Configuration File - cpupdate.conf | cPanel & WHM Documentation

What that will not do is prevent the server from being maintained on the current LTS version. If you're on 78 you will be moved to 86.
