Site and mail on separate servers

My client have a site that is in another hosting company. His domain DNS point to this hosting company. My client want use just my e-mail system. What configuration must he use to point to my e-mail hosting? Please, do not just say that he need to cread an A and MX record, I need to know how is this A and MX record fully
