High loads

Hi just wondering if anyone can help please. one of my servers every few days gets an high load and i don't know why. Load Averages: 0.30 0.82 0.60 this is normal most of the time but sometimes goes so high that i have to reboot the server. What i want to know is how can i find out what's making it go high now and then.
