DNS Settings for mail.domain.com when A-Record is pointed elsewhere

I am moving over a new domain, domain.com where the website is hosted on a different set of servers. I will have the A-records point to that server's IP address. However, email is hosted with us. But the mail.domain.com is setup by default with a CNAME record pointing to domain.com . . . which is going to be the other server by virtue of the custom A-Record. How do I keep mail.domain.com pointing to our local server? Do I change it to an A-record?? (And to clarify, this is not for the MX records - those will be fine. This is for connecting an email client to the server using mail.domain.com)

  Hello, Yes, you can change the "mail" entry to an "A" record that point's to the IP address of the local server. Thank you.
