What constitutes a relayed email ?

I have just found the View Relayers option within WHM ( I really should play more to see what's available, but time is limited), anyway, I am wondering what causes items to get listed here as I have relaying turned off (so I believe), but still get entries in this list. They are from valid email accounts on my server and I know they are legitimate, but why are they appearing to be relayed ?

  Hello :) Relayed email is email that a user on your server forwards to a remote account. Could you elaborate on what type of relaying you have disabled? Thank you.

  OK I thought relaying was somebody attempting to use my server to send from "domain not on my server" to a "domain also not on my server", ie open mail relay. Which I do have disabled. So basically, the relay is mail being sent to the outside world. Thanks for clearing that up.
