Can I change the subdomain being used for Dovecot and Exim?

Hi there, Getting email service up and running and I need an SSL cert for my mail server. However, before I buy one I wanted to see if there was a way to change the subdomain that is used for Dovecot or Exim. The name it uses right now isn't quite as self-explanatory and I'd love to change it to something like "mail." Is that possible? Thanks you.
