Hello, Any recommendations for a WHM-Plugin that would be able to, for example, list all Wordpress installs on the server and show the Wordpress version of that install?

  If they're installed via cPAddons you can find them using this tool: WHM "cPanel "Manage cPAddons Site Software Softaculous does that sort of thing for all installs as well.
