Advice of specific website going down

We have a client who we manage their dedicated cpanel server for them. They have around 100+ websites running on it, really good specifications on the server which is hardly being used.
They added a new account/site recently which was migrated across. At first the site was fine and running with no issues but after a few errors the site would stop responding. All other sites on the server still function fine but only this specific site.
After rebooting Apache/PHP or even suspending and unsuspending the site would bring it back online again for some time.
I tried increasing the PHP-FPM settings upping the process limits, memory limits and execution times etc which has helped but still every now and again the site times out and goes down until the above method is performed. I've checked error logs and stuff but can't seem to find out what the root cause could be.
Does anyone have any advice on places to check to see what could be the issue?

Hey there! When you say the site would stop responding, what exactly happens? Does an error show in the browser? Does anything show up in the Apache log in real-time if you watch that with "tail -f" while you reload the site? Is there a local error_log file in /home/username or home/username/public_html that has more details?
We'll need some more specifics before we can venture a guess as to what may be happening.0
