MariaDB very slow every hour
I use CloudLinux v8.10.0 STANDARD kvm and Mariadb Ver 15.1 Distrib 10.6.20-MariaDB, every hour there is a spike in CPU usage on my server, coming from the mariadb process. I have already disabled the logs only for Error believing that it would be the solution, but the problem was not solved. Could you tell me what happens every hour in MariaDB that causes this spike in CPU that is slowing down access for about 1 to 2 minutes?

Have you checked if any accounts have an hourly cron job running? When the CPU is high have you gone into PHPMyAdmin (for example) to see what's running?

The server is practically inaccessible when the problem occurs.. see the print.. it just happened again

This only happens every hour exactly. There is no user cron as mentioned. The rest of the time access is very fast.

You'd need to look in phpmyadmin or mysqladmin processlist to see what's going on. Just seeing mysql/mariadb at high CPU really tells you nothing.
