What needed to be done, exactly? It was going to me a mail folder copy.. but turns out that the new partition of extra space had not been set up correctly by the hosting company so would not work....

What do you mean by "disable exim and dovecot" exactly? If you disabled it and tried to restarted a disabled service, I would think those errors would be expected? If I disable EXIM from Service M...
