On the right side of the page, click the "Create a new domain" button and then you can enter a subdomain on the next page. Just uncheck the "Share document root" button when you create a subdomain.

Perfect. Thank you. It is so hidden. I have another Question and wont open a Thread for it. Is it possible to open cpanel with only a subdomain as cp.mydomain.com instead of ip:2083 or domain.tld:2083 And is it possible to give all users a fixed subdomain which they can use as domain? subdomain.myhost.tld

You're welcome! I would expect a default cPanel installation to work with cpanel.domain.com for all domains on the server as long as the DNS for that subdomain exists.

but is it possible to hide it that nobody can access trough ip:2083 or ip:2087 or domain.tld:2083 / 2087. only acces about cpanel.mydomain.tld. and whats with that: And is it possible to give all users a fixed subdomain which they can use as domain? subdomain.myhost.tld

It's not possible to hide the port option - as long as cPanel is installed those ports will open and accessible, so users can still manually type them in. You could always direct users to the hostname of your server. host.yourhostname.com/cpanel will also work well, but there isn't a way to create a custom subdomain for cPanel access.
