Hey there! There isn't a way to force this at the time the account is created. This value is stored in a plain-text file in /home/username/.cpanel/nvdata in the "username@domain.com_default_webmail_app" file. As long as that file contains "roundcube" it will work.

I tried this. it simply doesn't work. I have a email\@address.com_default_webmail_app with roundcube in it but when logging in it will still show the landing page first. I don't understand how there cannot be a way to simulate or force this after email account creation.

That's odd - that should definitely work, and does on my test machine. When I remove that text entry it also unchecks the "Open my inbox when I login" box from the webmail home interface. I don't have a good explanation for why that wouldn't be working on your system, but feel free to submit a ticket so we can see it in action.
