_acme-challenge.dominio TXT DNS records

I have noticed that cPanel now creates TXT records like _acme-challenge.dominio
in the DNS zone of domains are they for automatic renewal of SSL certificates?

  Hey there!  You're exactly correct - any acme-challenge records are there for SSL verification for the AutoSSL process.  You may even see them come and go depending on the timing of the AutoSSL renewal and when you check your zones.

  And how could it be done if I wanted to have the email on one server and the website on a different one?

  I'm not sure how changing the email would be related to the AutoSSL certificate.  Usually if you want email to go to one system you just update the MX record to a a custom location, but the AutoSSL would still get verified on the main server where Apache is running.
