CNAME record not propagating
I added a CNAME record to my domain so that I can use it on a landing page in Unbounce, but the record does not propagate. I have tried with 2 different records, "lp" and "site", and both do not propagate.

I'm assuming you are using the cloud version of cPanel, if this is the case - cPanel does not allow you to manage DNS out of the box, you would need to set up private name servers, or the record is formatted incorrectly
Hope this helps some.

I wouldn't say it's not "cPanel does not allow you to manage DNS out of the box" as all DNS management tools are there, but you would need to confirm your server is actually what is controlling DNS for the domain. If not, then you would need to either change the DNS management to be local to the cPanel server like Anthony Jackson said, you'd need to manually create those records wherever the DNS is being managed. That could be your host or registrar.

Thanks for the clarification on this, I was told by cPanel support that you needed to have private name servers set up before you could manage DNS, this is why I said this. to confirm you can manage DNS without setting up private name servers?

I think there's just some confusion on the terms here.
When cPanel is installed we include a full DNS system with BIND or PowerDNS that is ready and configured to work with your DNS records.
However, if you aren't using local custom private nameservers, no changes you make inside cPanel will propagate since your DNS is pointed elsewhere. You can however still take the DNS records from cPanel and copy paste them over to where your DNS is provided, as many users do that with SPF and DKIM records if the DNS is managed locally.

cPRex these are the nameservers registered in the domain. Would I have to change this? Wouldn't this affect the main site (outside the subdomain)?

I can't say for you if you "have" to change this, as how you manage the DNS is completely up to you. What I can say, is that if don't own those nameservers, you won't be able to manage the DNS inside cPanel for your domains.
