Is this documented somewhere? I got nowhere Googling, or forum searching, for "AppConfig Enforcement". I still don't know what that default checkbox would have done.

Thanks for explaining this. My follow-up is here: I found this traffic was not logged in access-logs, and it can happen with any random sub-domain, such as done by robot probes.

Sorry, I see you've already done that. Maybe what you mean is you want visitors to be forwarded to the https url from the http url. Other threads on these forums cover that. Try one and report back...
